Responsibilities

Ensures that all hot food preparation and assembling is completed in accordance with established procedures.

Cooks food in quantities according to menu and production sheets and recipes and prepares advance food items as appropriate.

Prepares hot entrees, soups and vegetables following production sheets and provided recipes for all dining experience locations.

Adapts to staff shortages and unexpected events that can effect food preparation, communicating with supervisor as appropriate.

Cleans area and equipment used during shift following master cleaning schedule.

Completes temperature checks for each meal and documents accordingly.

Tastes all food items prepared and conducts daily showtime meals with appropriate staff.

Completes preparation records and stores food items properly at close of meal service.

Completes appropriate preparation for food items for special functions as necessary.

Exercises good internal customer service in person and over the phone to respond to individualized resident food requests and needs.

Assists with service of meals according to menus and therapeutic spreads.

Assists with grocery check-in as appropriate.

Follows all HACCP guidelines regarding sanitizer buckets, temperatures, dating labels, and the like.

Communicates appropriately with maintenance for equipment failure.

Supports administrative policy and KMH philosophy at all times to ensure smooth relationships with staff, residents and visitors.

Strives to provide genuine home to residents by providing as much choice as possible, focusing on residents’ preferences while putting relationships ahead of tasks.

Qualifications

Knowledge of use and care of equipment including, but not limited to convection oven, stove, steamers, tilt skillets, food processors, mixers, grills, ovens, and steam jacketed kettles. Must have knowledge of basic principles of cookery and baking, serving and handling food, and safety and sanitation practices. Must demonstrate willingness to learn basic diets. Demonstrates honesty, reliability, and soundness of moral character. Must be able to problem solve about replacing staff and equipment failure to effectively complete shift. Ability to add, subtract, multiply, and divide in all units of measure, using whole numbers, common fractions and decimals in order to adjust recipes to yield as appropriate.

EDUCATION and/or EXPERIENCE

High school diploma or equivalent. Prior mass cooking experience preferred. Long-term care experience preferred.

LANGUAGE SKILLS

Ability to read, speak, write and follow simple oral and written instructions. Ability to effectively present information in one-on-one and small group situations to customers, clients, and staff.

CERTIFICATES, LICENSES, REGISTRATIONS

Food handler’s card preferred.

The employee must occasionally lift and/or move up to 50 pounds. Specific vision abilities required by this job include close vision, distance vision, color vision, peripheral vision, depth perception, and ability to adjust focus. Must be able to push and pull carts weighing up to 200 pounds. Must have good balance to coordinate body in traffic flow around other staff and residents. Must have a steady gait to walk in sometimes wet, slippery areas.

While performing the duties of this job, the employee is occasionally exposed to wet and/or humid conditions, moving mechanical parts, fumes or airborne particles, toxic or caustic chemicals, extreme cold, extreme heat, risk of electrical shock, and vibration. The noise level in the work environment is usually loud.
